Let them get to Room Temp and braai over moderate to hot coals (or fry, grill, bake) taking care not to burn and do not let the meat get singed/burnt in any flare ups. Brown the steaks nicely turning frequently but do not overcook! Remove from coals and let the steaks rest for 5-10 minutes in a warm place to stabilize juices (NB), spice with just salt and pepper – Keep It Simple. Enjoy with good company and a good red wine!
